Immunity boosting stir fry
It's always a good time to boost your immunity. That aside this is just really tasty too. Super cheap to make, packed with flavour and texture and is Vegan and Gluten Free.Ingredients: (serves 1)Sauce:2 tablespoons of Sesame Oil1 teaspoon of honey/syrup1 teaspoon Soya Sauce1 inch of grated ginger2 cloves or garlic gratedVegetables and noodles:This is really up to you but what I find works are:Sliced Red Cabbage (about 1/5th of a large head)Grated carrot (one large or 2 small)2-3 spring onions2 handfuls of peanuts1 serving of rice noodlesOptional extra vegetablesTender stem BroccoliBok choyOptional garnish:Fresh coriander choppedToasted sesame seeds 
Method:In a bowl mix the ingredients for the sauce and set asideWash and chop all veggiesOption to place the peanuts on a tray in a low heat oven or grill and roast them slightly to release their flavour. This can also be done in a pan on the stove, tossing regularly.Heat a frying pan/wok on medium heat and add the sauce letting it cook and sizzle for 3-5 minutes.Add the veggies and stir well.In a second pan place some boiling water and cook noodles as per instructions. Rice noodles generally only take a few minutes to cook.Drain the water and add the noodles to the vegetable and sauce mix, stirring well to fully coat the noodles.Add in the roasted peanuts and stir well.Taste and season if needed.Add optional garnishes (above).Serve and enjoy!
