Pimped up Porridge

 

Maybe you’re on a budget, maybe you’re being conscious of buying locally sourced food, maybe you’re aiming to reduce your packaging waste, maybe you’re looking to increase the amount of whole foods you eat or maybe you’re just a big porridge fan. Either way this is the meal for you!

Porridge can be boring, lets face it. It can be tasteless and sloppy and the nightmare of your childhood mornings. But here is a simple and tasty recipe that might just change your mind.

Nutritious and a really good way to start the day.

Ingredients:

(serves 1)

50g of rolled oats -organic if possible in paper packaging or un-packaged even better!

10g of chia seeds

1 heaped teaspoon of nut butter – organic, palm oil free and sugar free if possible.

Maple Syrup to taste

1 apple – organic and packaging free.

1/2 teaspoon of cinnamon

1/2 teaspoon of nutmeg

Sprinkle of chopped nuts

 

Method:

On a medium heat add the oats to 1 cup of boiling water in a pan and stir well. Allow to sit and simmer.

In another pan place a dash of boiling water (just enough to cover the bottom of the pan) and place the chopped apple (I leave the skins on), cinnamon and nutmeg in and stir well. Place a lid on the pan and allow the apple to simmer and steam while you stir the porridge.

Into the porridge pan now add the chia seeds and nut butter and stir well. It’s ok if the nut butter stays in chunks it’s a tasty surprise when eating!

Periodically remove the lid on the apple pan to release the steam and stir, making sure the apple is coated with the spices.

Once it is quite hot add the porridge to a bowl, top with the stewed apple and drizzle with syrup or honey to taste. Sprinkle with chopped nuts (I used pecans here) and any other toppings you enjoy.

Cosy up with the warm bowl and enjoy!

Apples, especially with their skins on, are packed with fibre especially pectin, a type of fibre that acts as a pre-biotic boosting the good bacteria in your gut.

Nuts are high in healthy fats, make you feel full for longer, are whole foods, help to reduce bad cholesterol, are naturally anti-inflammatory and most are packed with antioxidants.

Cinnamon helps to stabilise your blood sugar and burn fat more effectively.

Nutmeg is naturally antibacterial and contains antioxidants which are compounds that protect your cells from damage caused by free radicals.
